Not done any head work on a 2.5 but I took 1mm off a 3 litre heads, ran it 95 RON (UK) with no sign of pinking / pinging.

check body to engine earth cable which should be located rhs front of engine bay, and the ecu loom earth connections (ring terminals) located just under the air intake plenum.

75W90, which I think is synthetic based, and as he ^^ said about 3 litres quantity, or fill it up until the fluid pours back out.
