Hi, I'm building a basically stock 2.5L 12V.
I have a crank from one engine and flywheel and pulley from another.
Should I get the whole lot rebalanced as a complete unit?
And if so, is the the sort of task that your average shop can do or is it a job for an alfa specialist?

No, it is not a job for an Alfa Specialist. Balancing is generic work for machine shops set up for it.
Before you transplant the crankshaft into the rebuilt engine, you should have the internal oil galleries of the crankshaft cleaned and be sure they are free from any blokages. Having done that, the access holes should then have new bungs installed in them to ensure they do not work loose with new oil pressure. I would suggest that your bungs are of the threaded type installed with a chem lock solution as well.
Speaking of oil pressure, this would be the time to have the oil pump reconditioned. A key worker in your rebuilt engine !
